400 gr
400 ml of tomato sauce
1/2 onion
40 ml extra virgin olive oil
50 grams of sugar
50 ml of vinegar
1 teaspoon of potato starch
1 teaspoon sweet paprika
1 pinch of salt

ginger

How to make homemade ketchup

Slice the onion and sauté with oil in a thick-bottomed saucepan.

In a small bowl, dissolve the sugar with the vinegar, then add the flour, stirring once very well.

Add the tomato sauce in the pan and cook briefly, then add also the spices (cinnamon, nutmeg and ginger) and stir.

Add the mixture of vinegar and blend with the blender.
Put the heat to low, cover with the lid leaving a small opening on and cook for about 1 hour, going to stir occasionally.

Once you have reached the right consistency (it should be creamy but fluid), turn off and let cool completely, then put it in a jar and let stand in refrigerator for at least 30-60 minutes.
Your homemade ketchup is ready. You can consume it immediately, or store in refrigerator up to 1 week.
If you prefer, you can prepare in larger amounts, close the jars with the product still hot and turn upside down until it cools to create vacuum, and then pasteurizing the jars: by doing so you can save your ketchup in the pantry for a few months.
